The Restaurant at Kellogg Ranch (RKR) project focuses on analyzing and re-imagining the identity and visibility of the student-run restaurant located at Cal Poly Pomona’s Collins College of Hospitality Management. The restaurant operates as a training environment where hospitality students manage real restaurant operations while serving guests, creating a professional learning experience that bridges education and industry practice.
Research examined RKR within the broader landscape of student-operated culinary training restaurants through competitor analysis, dining experience evaluation, and brand positioning studies. Key findings revealed challenges including limited campus visibility, inconsistent brand identity across platforms, and wayfinding issues that make the restaurant difficult for new visitors to locate. Despite these barriers, RKR holds strong advantages such as quality dining experiences and positive guest reviews.
